Vegan Honey

Ingredients

  • 1L apple juice
  • 400g (2 cups) caster sugar
  • 2 chamomile tea bags, optional
  • 1 tsp lemon juice, or orange

Instructions

Add all ingredients to a small saucepan. Stir to dissolve the sugar, then bring to a boil. Remove the tea bags after a few minutes.

Once boiling, reduce the heat to low and simmer uncovered for 45-50 minutes, or until the liquid has reduced by half. It may still appear watery at this stage - don’t worry, it will thicken as it cools!

Let the syrup cool completely. It will thicken to a honey-like texture as it rests. Pour into a clean, airtight jar or bottle and store at room temperature.
