Chinese Sweet Red Bean Dessert Soup

Ingredients
- Soup
- 2 cups red adzuki beans (soaked in cold water for 2 hours, or overnight)
- 14 cups water
- 5 cups sugar (coconut sugar works too – add less if you prefer it less sweet)
- Topping Options
- Coconut cream (Kara brand is the best)
- Fried Chinese bread sticks (You Tiao/You Char Kway) – available at Chinese grocery stores
- Soy milk
Instructions
- Prepare the Beans: Drain the soaked adzuki beans and place them into a large pot with water.
- Cook the Beans: Bring the pot to a rolling boil, then reduce the heat to a simmer. Let the beans simmer for about 2 hours, stirring occasionally to prevent the beans from sticking to the bottom of the pot.
- Sweeten the Soup: Once the beans are soft, add the sugar and stir until dissolved. Avoid adding the sugar earlier to prevent the beans from burning.
- Prepare the Toppings: In a separate bowl, whisk together a small amount of coconut cream and soy milk to create a creamy topping.
- Serve: Serve the red bean soup hot, topped with a drizzle of the coconut cream mixture and crispy fried bread sticks
