Mango Sago

Ingredients
- 3/4 cup sago
- 3 sweet mangoes, ripe juicy
- 1 cup coconut milk
- 1/4 cup sweetened dairy-free coconut condensed milk
- pinch salt
- lime zest, optional
- toasted coconut, optional
Instructions
Peel and chop your mango into small cubes. Set half aside for topping and use the other half in the base mixture.
Bring water to a boil and add the sago pearls. Cook for 10-12 minutes, then cover and let sit for 5 minutes. Rinse under cold water until fully cool, then soak in cold water until ready to use.
In a blender, combine coconut milk, condensed milk, salt, and half of the mango cubes. Blend until smooth and creamy.
In a large bowl, mix the mango cream base with the cooked and drained sago. Chill in the fridge for a few hours.
Serve cold in chilled bowls or cups. Top with extra coconut cream and the reserved chopped mango. Enjoy!
