5-Minute Cashew Romesco Sauce

Ingredients

  • 220g roasted peppers
  • 120g sun-dried tomatoes
  • 1 garlic cloves
  • 1 tbsp sherry vinegar
  • 1 tsp smoked paprika
  • 100g cashews
  • 1/2 tsp salt, or to taste
  • 3 tbsp olive oil

Instructions

Place all ingredients into a blender and blend until you reach your desired texture. Traditional romesco is slightly grainy, but you can blend until completely smooth if preferred.
