Ingredients

Tofu Ricotta

  • 350g firm tofu
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 2 tbsp nutritional yeast
  • 3 tbsp olive oil
  • Salt and pepper

Optional Flavourful Additions

  • miso paste
  • garlic powder
  • dried herbs

Instructions

Blitz everything in a food processor until smooth and creamy - scraping down the sides as needed. Store in the fridge in a clean container for up to 1 week!
