The Absolute Best Eggless Vegan Mayo

Ingredients
- 1/2 cup soy milk, unsweetened
- 1/2 tsp black salt
- 1/2 tsp mushroom seasoning
- 2 tbsp dijon mustard
- 2 tbsp apple cider vinegar
- 1 cup neutral oil (avocado or canola)
Instructions
In a blender or using an immersion blender, combine soy milk, black salt, mushroom seasoning, dijon mustard, and apple cider vinegar. Blend until well mixed.
Turn the blender on medium speed and slowly stream in the oil. The oil will emulsify and thicken into a creamy mayo. Continue blending until smooth.
Store the mayo in a clean jar in the fridge. It’s perfect for sandwiches, burgers, chips, and more.
Feel free to add wasabi powder, sriracha, or truffle oil to create flavoured mayo options!
