Coriander Pesto (Cilantro Pesto)

Ingredients
- 3 cups coriander
- 4 cloves garlic
- Juice of 1 lemon
- 1 cup roasted salted cashews
- 2 tbsp nutritional yeast
- 1 cup olive oil
- 1/2 cup vegan Parmesan cheese
- 1/2 tsp salt, or more to taste
- 1/2 tsp black pepper, or more to taste
Instructions
Place all ingredients into a food processor and blitz together - not too smooth there should still be some chunks. Scrape down the sides a few times and run the food processor again til you reach your desired consistency. Store in the fridge for up to 1 week.
