Instructions
In a large pot, heat a few inches of oil to 180°C. Fry a few wonton wrappers at a time, making sure they don't fold over or crowd the pot. Fry until golden brown, then drain on paper towel.
Crumble the firm tofu and fry in a little oil with a pinch of salt. Set aside to cool slightly.
For the veggie filling, heat oil in a pan and fry garlic for 30 seconds. Add carrot and jicama, then season with salt, sugar, white pepper and a drizzle of sesame oil. Cook for a few minutes until the jicama is slightly softened. Taste and adjust seasoning as needed. Set aside.
To assemble, lay out the crispy wonton wrappers on a platter. Top each with a bit of chopped lettuce, a spoonful of veggie filling, crumbled tofu and bean sprouts. Drizzle with hoisin and sriracha, then finish with crushed peanuts, crispy shallots, coriander and sliced chilli. Serve immediately.
