Instructions
Toast English Muffins.
Place two on a plate (per person) and top with wilted spinach.
Place avocado on top of spinach.
Place crispy polenta rounds on top of the spinach.
Cover with Hollandaise, sprinkle with chopped chives and a dash of paprika!
