Meaty Vegan Kebab Sandwiches

Ingredients
KEBABS
- 500g vegan mince (I used half naturli mince and 2 beyond patties but next time I’ll just use beyond)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp cayenne
- 1 tsp smoked paprika
- 1/2 tsp all spice
- 1/4 tsp sumac
- 1/4 tsp cumin
- 1/2 tsp salt
- 1 jalapeño
- 1 tomato
- 1/2 white onion, grated and squeezed
- 1/4 cup chopped parsley
- 1/4 cup chopped coriander
- 50g vegan feta
- 3 cloves garlic, minced
GARLIC TAHINI SAUCE
- 1 cup coconut yogurt (I would use mayo next time I reckon)
- 1/4 cup tahini
- 1/4 cup lemon juice
- zest of 1 lemon
- 2 tbsp vinegar
- 6 cloves garlic
- salt, to taste
- freshly cracked pepper
OTHER
- pita bread
- onion and parsley
- chilli sauce
- Fries
- fresh tomato
Instructions
- Blend all sauce ingredients and set aside.
- Mix all kebab ingredients together and fashion into kebabs – thick wooden skewers work best (I repurposed some chopsticks that came with takeaway) but you don’t even necessarily need the sticks!
- Pan fry til cooked through.
- Serve on hot pita with fresh veggies, fries and plenty of tahini sauce! DEVOUR!
